Chocolate Chip Pancakes


I’m going through a major breakfast food obsession at the moment. To be honest, I think I was always obsessed with breakfast food, but it’s way more fun to experiment with it when you have someone to share it with. If you look at my Instagram, it’s basically all burgers and breakfasts lately (you know you’ve picked a good ‘un when he comes with his own waffle iron), but one of my favourite things we’ve made is chocolate chip pancakes.

I’ve actually never made pancakes before – on pancake day I’ve always used the premade stuff, and it’s never really occurred to me to make American style ones. But Matt challenged me, and I accepted (plus, I had to top his French toast from the weekend before). These were super simple to make, but bear in mind that if you’re making them for two, this recipe makes a lot. We decided to scoff at the ‘Serves 6’ suggestion, but… yeah. Next time, I’d definitely half it.


I thought I’d be amazing and put butterscotch chips in the pancakes but they didn’t really work – they just went super chewy and stuck our teeth together. The chocolate was good though – I think chopped nuts could be too!

Chocolate Chip Pancakes (originally from here)
- 250g plain flour
- 4 tablespoons sugar
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 350ml milk
- 4 tablespoons cooking oil
- 1 bag of chocolate chips and anything else you want to add

1. Stir together the flour, sugar, baking powder and salt in a big bowl.
2. In another bowl, beat the eggs, milk and oil.
3. Add the wet mix to the dry ingredients and combine thoroughly.
4. Stir in chocolate chips and any other filling you fancy.
5. Decant the batter into a jug and pour a little into a lightly greased frying pan, using about 60ml for each pancake depending on how big you want them to be.
6. Turn when bubbles form on top and edges are a bit dry; cook until second side is a lovely golden brown.
7. They're harder to turn when the pan isn't greased, so you'll need to keep adding oil or butter every few pancakes. Healthy!
8. Serve straightaway on their own, or with honey, jam or syrup.

They might look a big old mess, and all that melty chocolate may look suspiciously like burnt bits, but trust me... they sure taste good!
