RECIPE: Sweet potato with feta and coriander sauce

Coriander sauce, dressing, chutney or salsa for sweet potatoes, salad and rice

Sometimes it doesn't feel like writing about food requires much effort. But then sometimes you try to start a post with 'Look at that tasty bowl of green and orange stuff' and realise that, okay, some effort is required. It IS a tasty bowl of green and orange, though. Sweet potatoes and feta are a match made in edible heaven, it's true, but as I decided that my dinner would involve the pair of them, I realised it needed something else too. Something saucy, but salady. Something... about the same colour as a frog.

So, I made this. I've called it a sauce, but you might call it a chutney or a salsa, or even a salad dressing. Or, even 'Something like a pesto', which is what my Mum went for (I think it was the colour, it's really not a lot like a pesto at all). Either way, it's sharp and garlicky and is very, very nice on a baked sweet potato. It's also very, very nice stirred through rice when you make burrito bowls. It's just very, very nice. And easy! Just chuck everything into your blender (I used my BlendActive) and it's basically done. You don't even need to chop. Just chuck. And press a button.



Coriander sauce, dressing, chutney or salsa for sweet potatoes, salad and rice

Coriander Sauce
30g coriander
Juice of 1/2 lemon
One large tomato
1 clove garlic
1 red onion
1 tsp salt
1 tsp cajun or cayenne
1 tsp black pepper
1 tbsp olive oil

Serves 2-4 / 5 Weight Watchers SmartPoints for the whole thing 
(but you could substitute oil for yogurt to make it 0SP, which works pretty well)

1. Roughly chop your tomato (I know, I lied, but that's all the chopping) and add to your blender with everything else.
2. Blend it.
3. Serve it. Bam. How easy was that?

Serve with whatever you like, ducks. But sweet potato and feta is good, like I said. And stirred through rice. Like I also said. I usually throw some coriander on top for good measure, because I really like coriander.
