Chicken & coriander burgers


I've had an epiphany that being excited about what I'm eating gives me more of a push to eat healthily. The truth is, there are tons of healthy recipes out there that are really yummy, but I have a terrible habit of pinning them and forgetting about them. So lately I've been scouring my Pinterest boards for inspiration, and it's working. I'm not really craving takeaways and pub grub any more - I'd much rather have something delicious and fresh that I made myself.

The other thing I'm doing is a freezer inventory. We stocked the freezer up pretty sharpish when we moved in, and I'm keen to actually use the random things in there, rather than discover eighty packs of discounted chicken breast when we move out. I adapted this burger recipe, as I had some chicken mince that I bought excitedly (from the discount section, hooray) which I popped in the freezer and promptly forgot about all those chicken mince related recipes I was going to make. Anyway, it turns out we had almost all the ingredients already for this recipe, and anything we didn't have, we just improvised. Woohoo.


Chicken & Coriander Burgers
500g chicken or turkey breast mince
Big bunch of fresh coriander (we used about half a small pack)
1 small red chilli, finely chopped and deseeded
1 egg
3 tablespoons breadcrumbs (approx)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
1 clove garlic, crushed

Makes 4 burgers /  2 Weight Watchers SmartPoints per burger

1. Preheat the oven to 200c / gas mark 6.


2. Combine all the above in a large bowl and stir to combine with a wooden spoon


3. If the mixture seems very wet, add another scattering of breadcrumbs - I've estimated the amount in the ingredients, we put in two big shakes straight from the pot, I recommend doing it by eye


4. This is the messy bit - divide the mixture into four and shape into burger patties with your hands


5. Pop on a baking tray and cook for 20 minutes, then finish off in a skillet or frying pan for about 2 minutes on each side to give it some crisp and colour (a lot of recipes say to cook for 5 minutes on each side and that's it, but ours wasn't done inside when we did that!)


6. Serve on brioche buns with homemade guacamole, sweet potato wedges and lots of salad. Yum!

This was a weekend dinner, as we've developed a bad takeaway habit - my new job is working for an online takeaway brand, and it turns out that talking about takeaway all day just makes me want it more. Not the best habit to get into. So, my new strategy is to suggest fakeaways to make of a Friday - I still get excited about my dinner, but feel much less guilty afterwards. And this was super tasty! Full of flavour, but without the horrible guilty feeling you usually get from a burger. It was lovely and moist, too.

  2. I wouldn't be able to leave the house if I worked for a takeaway company, but this looks downright delicious! I've never heard of minced chicken before though, gunna keep a look out for that!
