So here we are in the dark, don't the day feel like a world apart.

After a taste of warm weather, we seem to be back in the grip of a cold, drizzly snap. Times like these call for comfort food, so I thought I'd share my favourite, super-easy, not-too-unhealthy comfort dinner.

You can make this as good or as bad as you want - this version is the bad version, but if you want to leave out the cheese (or just use a little bit of a stronger cheese) and the bacon, you'll drop the fat content by a lot. As I've just started a bit of a health kick, next time I make this, I'll be doing the good version - but I made this a week or so ago when I was eating whatever I wanted. (Mainly, lots of cheese)

Carbonara of a Cheat.

Ingredients:
Mushrooms
Onions
Bachelor's Condensed Mushroom Soup (full or low-fat)
Pasta
Splash of milk

Optional:
Bacon
Cheese
Herbs


1) Put your pasta on to boil.
2) If you're using bacon, chop it up and fry it until cooked.
3) Add mushrooms (I use loads, because I am dangerously obsessed with mushrooms) and an onion or two.

Wash them mushrooms first!

4) Shoosh them all around the pan for a bit until they are done.
5) Add seasoning as desired - I added two cloves of fresh garlic and a little dried rosemary.


6) Throw in the can of soup.
7) Add some milk to make it less thick. Stir until combined.


8) If you're using, add cheese. Um, I used kind of a lot.

Cheese!
CHEESE!
Look at the cheese!
YAY FOR CHEESE.

9) Stir until cooked through.
10) When pasta is finished, drain and add to the sauce.


And you're done! Serve, eat, and relax. Yum.


Maybe add some more cheese on the top. You know. If you feel like it.

  9. I do this one - but use chicken soup and chicken instead of mushrooms :)

    and Chicken Nachos - absolutle fave quick dinner

    This is our flat's go-to meal on at least two occasions each week haha (: We also like sausage pasta bakes, y'know, being students and all! You should definitely post more recipes Sarah! xx

  14. my go to recipe is a bit like this actually - but for the sauce i use fried bacon, cream and whisked eggs - yum!
    i'm going to bookmark this recipe and try it out soon though! :D

  18. this looks SO GOOD! i made the philadelphia carbonara (with quorn bacon!) last week but it wasn't very good. mushrooms are my favourite food ever so i'll definitely be trying this! x

  19. I thought there was no such thing as too much cheese until Alex told me of a meal he made in his student days where he made a pot of pasta sauce and lobbed in half a kilo lump of cheese. Apparently it took a while to melt, and was "a bit cheesy".
